A morning's prep, read from the kitchen's own records

The tablets in the film are the station page itself, recorded on the platform with the demo kitchen: every screen on them is the real page, held until the narrator names the next tap, nothing on it changed or reordered. Around them, the film draws where each line comes from. The voice and music are AI-generated.

Recorded October 27, 2026 on the Garde manger's and the Fry's tablets, in the kitchen's morning. Every word the narrator says is on this page and in the captions.

Shadow mode first

Part of Kitchen Complete. A kitchen starts in shadow mode: every line is checked with its chef.

In shadow mode the chef still sets the day's prep. Each line Prep List + gives is checked against the chef's list, and the tablet taps what the chef said; a kitchen moves past that only on recorded evidence, lines about an allergen or a food kept by time and temperature last.

Every caption, in order
  1. 0:00

    Every station opens on Today

At Foxed & Brass, the Garde manger and the Fry each have a tablet, and each tablet opens on Today. This is the Garde manger’s list for the morning: each item it keeps and the par to build to, read from the kitchen’s own records. While a kitchen is starting out, every line also says Check with the chef, and the chef’s list still decides what is made.

  2. 0:30

Each line says where it stands

The marinated tomatoes have nothing on hand, so they’re made today. Open the line, and it shows what the records hold for it, with the recipe one tap away. The cook checks it with the chef and taps Matched, which changes nothing on the line.

  3. 0:49

    The recipe, one tap away

Tap Recipe, and the Volume 1 recipe it’s made by opens: its allergen lines as they were signed, its yield, and its method. Back returns to the line, right where the cook left it.

  4. 1:03

    Made, and on the record

The cook enters how much was made and taps Complete. The tablet asks who’s working: a name on a shared tablet, not a login. The line reads done only once the kitchen’s records have it.

  5. 1:19

    A label from the records

Print label sends the batch’s label to the station’s printer: the use-by date in large type, when it was made and by whom, and the allergen lines in the records’ own words. Nobody works out a date by hand.

  6. 1:35

    Ride It

Yesterday’s green goddess is on day two of its three days. There’s no need to make more: one tap rides the batch on hand, and the cook’s name goes on the record.

  7. 1:48

Near its date, the tap asks

The buttermilk chive is on day four of five. That close to its date, Ride It asks whether the batch was checked, and the answer goes on the record with the ride.

  8. 2:01

    Past its date, no ride

The hummus is a day past its four days. There’s no Ride It button and no label for it: discard it, or a chef holds it with a reason. Maya discards it, and the discard goes on the record with Maya’s name.

  9. 2:19

    A count becomes a question

Over at the Fry, the curry aïoli comes from the Garde manger. Theo counts a quarter pint on hand, under its par, so the Fry’s tablet asks whether to bring over the rest. One tap accepts.

  10. 2:35

    Oldest first, already picked

The receive line lists the batches from the Garde manger, oldest first, with the oldest one still in its life already picked. One tap confirms it, and that’s the first-in, first-out record: the batch keeps the day it was made.

  11. 2:52

    Each tablet keeps its language

The Fry’s tablet is set to Spanish. The page’s own words change; a recipe’s allergen lines stay exactly as they were signed, with a note to ask the chef.

  12. 3:05

    When the Wi-Fi drops

If the kitchen loses its connection, the tablet keeps working from what it last read, and says when that was. A tap made offline waits on the tablet, and goes to the kitchen’s records when the connection is back.

  13. 3:20

Prep List +, with Ride It

That’s Prep List + from The Kitchen Fieldbook. Every line, date and label is read from the kitchen’s own records, and every tap that changes a line is kept with the name of who made it.
